Equipment needed : Parchment lined baking sheets
In a bowl, combine almond flour and granulated sugar.
In a separate bowl, beat the egg whites until stiff peaks form.
Gently fold the egg whites into the almond mixture.
Stir in the almond extract.
Form the dough into small balls and roll them in confectioners' sugar.
Place the cookies on the prepared baking sheets.
Bake for 25-30 minutes or until they are set and have a slight crust.
Let them cool before serving.
