Cook the pasta in boiling salted water until al dente. Drain and keep some pasta water.
In a large skillet, heat the olive oil over medium heat.
Sauté the minced garlic until fragrant.
Add the assorted fresh spring vegetables and cook until they're tender yet crisp, typically about 5-7 minutes.
Toss the cooked pasta with the sautéed vegetables, adding pasta water as needed.
Season with salt and black pepper.
Garnish with chopped fresh basil, mint, and grated Parmesan cheese
